Italian Apple Pudding

This Italian apple pudding recipe produces a light, moist and creamy dessert made almost exclusively on apples. The recipe is from an old Italian cooking magazine, where it is presented as a buffet serving.
I was so intrigued by the ingredients and the preparation that I just had to try it. The result is gorgeous. Light, moist and creamy though made almost exclusively on apples. Clearly a recipe to remember.
Ingredients
8 apples
1 tbsp butter
4 tbsp sugar
4 egg yolks
1 egg
4 tbsp bread crumbs
1 tsp vanilla
Lemon juice
Preparation
Peel and core the apples and cut them up in smaller bits
Fry 2/3 of the apples in butter until they turn soft. Stir in sugar.
Blend the apples with bread crumbs, vanilla, egg yolks and egg.
Grease 8 small ramekins – or 4 big ones – with butter and dust them with sugar.
Spoon the apple mixture into the ramekins and bake them in the oven at 175 C (350 F) for 15 minutes.
Boil the remaining apples with a little lemon juice to a nice apple sauce.
Place the Italian apple pudding on top of the apple sauce before serving.
