Cake with apples, walnuts and dates

This cake with apples, walnuts and dates is a winter classic with a delicate taste of palm trees and warmer climates.
I don’t really recall where I collected this recipe, but it has got a delicate North African taste and it never turns dry. Qualities that have turned it into a great family favourite – especially around Christmas.
Ingredients
3 apples – cored and cubed
15 walnuts
15 dates
120 g flour
1 tsp baking powder
Pinch of salt
120 g sugar
1 tbsp honey
25 g melted butter
1 egg
Icing sugar for dusting
Preparation
Wash and core the apples, and peel them if you prefer them peeled, before they are slices and cubed.
Remove the stones from the dates and cut them in smaller pieces
Mix flour and baking powder with sugar, salt and egg.
Stir in melted butter and honey – it might be easier if the honey is heated a little with the butter.
Add the fruit and walnuts when you have got an heavy, sticky batter.
Mix it around and spoon it on to a baking dish lined with parchment paper.
Bake for 30 minutes at 190 C (375 F).
Leave the cake with apples on a wire rack to cool and dust with sugar.
