Where to eat in Vercelli
One of the most innovative places to eat in Vercelli is a restaurants, coffee shop and take-away specialising in a gluten-free diet.
It is not often you find Italian food adapted to the needs of people with food allergies, but in di.Lab Gastronomia in Via Veneto 3 in Vercelli, you’ll find gluten-free gourmet food with a general appeal. The products range from entire meals to traditional quick bites such as brioche, focaccia and macaroons and muffins for breakfast, lunch or tea.

The concept was designed to cater for people suffering from coeliac disease and gluten sensitivity, but not just. The preparations of di.Lab Gastronomia can be enjoyed by anyone. And it sprung from the discovery of new techniques to retain the nutrients of parboiled rice from Piedmont and transform them into pasta with the same characteristics as pasta made from durum wheat semolina.

Appetizing, high-quality food for people with allergies
This enterprise was undertaken by three siblings by the names Beppe, Nicola and Giulia Viazzo of the Riso Viazzo company, and they decided to open a shop in the centre of Vercelli, where people could taste gluten-free products and seek inspiration on how to prepare appetizing, high-quality food for people with allergies. In the shop there are elegant and irresistible finger food and antipasti, delicious looking cakes and desserts and of course a wide range of ready-made meat, vegetable and pasta courses such as lasagne and cannelloni. We had a far too tiny plate of treats and left with souvenir packages of rice flour, rice pasta and loads of inspiration.
Other souvenirs from Vercelli include the Bicciolani from Pasticceria Follis and six-packs from Birrificio Sant’Andrea.
