Speck rolled with cheese and walnuts
One of the great privileges of being in Italy is the availability of delicacies that cost a fortune in most other countries. Like speck rolled with cheese and walnuts.
In the local salumeria 100 g of freshly sliced speck is sold for less than 2 Euro. And an open plastic cup filled with ricotta costs even less. This means both ingredients can almost always be found in my fridge, where they are used in a number of impromptu dishes.
For instance the dry-cured and lightly smoked ham from the mountains of Alto Adige makes a perfect starter when wrapped around a mixture of ricotta, mascarpone and grana padano.
Ingredients
9 slices of speck
100 g ricotta
50 g mascarpone
50 g grana padano
50 g walnuts
Preparation
Grate the grana padano and use a fork to mix it with ricotta and mascarpone.
Chop walnuts and 1 slice of speck finely and mix is with the cheeses.
Place a spoonful of the cheese mixture on each slice of speck and fold them into nice rolls.
Serve speck rolled with cheese and walnuts along with salted nuts, crackers, grissini, tiny crostini and other kind party finger food.

Speck is great and not unlike cured ham with a bit of added smoke.
