Pasta with artichokes
Pasta with artichokes is one of those easy dishes that serve as homemade fastfood.
All you need to produce a gorgeous sauce for tagliatelle pasta are some fresh artichokes, a little white wine and a fistfull of grated pecorino.
Ingredients
8 small artichokes
100 ml white wine
Fresh mint
grated lemon zest
50 g pecorino
Olive oil, salt, pepper
Preparation
Break all exterior leaves off the artichokes until you reach the tender heart.
Cut off and discard the tops.
Cut off and peel the top 5 cm of the stems.
Cut hearts and stems in thin slices
Fry the artichokes in olive oil for 3-5 minutes, before wine is added.
Let the alcohol evaporate.
Boil the pasta tagliatelle, mix it with the artichokes and cover with grated pecorino, grated lemon zest and chopped fresh mint fore serving.

Oh my gosh YES to this recipe! I’ve never heard of frying artichokes, Mette. Lordy my mouth is watering. It’s not only going into my Mette Recipe Folder but I’m printing this out as we speak to try asap! Awesome! :)
Young artichokes are quite tender, so there’s no need to cook them for hours.

I love carciofi!!! I make mine with preserved ones w/ ricotta cheese and pine nuts! Simple but yummy!!!
