Chicken with Garlic and Lemon
Chicken with garlic and lemon is a variation over Pollo alla Potentina. The recipe uses some of the typical ingredients from Basilicata such as lemon, garlic and local paprika from Senise.
Chicken with garlic and lemon is one of the easiest meals to prepare, when you come home from a long day at work. All it takes is two pieces of chicken breast, some onion and spices, and a few minutes on a frying pan. Chicken with garlic and lemon can be served with a nice salad like panzanella, cauliflower loaf or roasted potatoes that are crisp on the outside and soft at heart. Delicious.
Ingredients
The breast of 1 chicken – two pieces
1 shalot onion
2 cloves of garlic
1 tsp paprika di Senise (ordinary paprika or the Spanish Pimenton de la Vera Dulce can be used instead)
1 lemon (juice)
Olive oil, salt and pepper
Fresh chervil (or parsley)
Preparation
Cut each skinless, boneless chicken breast in horizontal slices, and cut the slices in smaller strips.
Sprinkle the meat with paprika and mix well
Chop shallot and garlic finely.
Heat up the olive oil in a frying pan and fry the shallot and garlic over low heat.
Add chicken strips to the frying pan and fry for 10-15 minutes.
When the meat is fully done, press the juice of one lemon over the chicken and fry some more.
Add salt and pepper to taste.
Sprinkle the chicken with garlic and lemon with chopped chervil just before serving.

Mmmm, we eat so much chicken at home but, surprisingly, never like this. Looks so simple, too, and has all the ingredients we love. Guess we’re gonna have to try it then. :)
