Apple muffins with hazelnuts

Spicy and moist apple muffins with blended hazelnuts make a great snack for tea or breakfast.
Some cooks and their cookbooks are so highly profiled that their recipes seldom work. Perhaps they just use the books as promotion for their restaurants and bakeries, which is annoying to say the least.
The idea for these apple muffins came from one of the Danish hotshots, but I had to modify the recipe in so many ways that no credit is due. Still, the small cakes turned out more than all right in the end. For variation you might also like the Walnut and apple cake
Ingredients
250 g white sugar
50 g brown sugar
200 g butter
50 g hazelnuts
200 g flour
2 tsp baking powder
1 tsp cardamom powder
1 tsp cinnamon
2 eggs
4 apples
Preparation
Mix white sugar, brown sugar and butter well with an electric mixer
Blend hazelnuts and add them to the sugared butter along with spices, flour and baking powder.
Stir in one egg at a time
Peel and core the apples and cut them up in very small, even pieces
Fold them into the cake mixture
Pour the mixture into greased muffin forms and bake at 170 C / 350 F for 20 minutes
Let the apple muffins cool a little before turning them out on a wire rack.

Apples and hazelnuts are a great combo so I know I’d like these muffins. Pity you aren’t the one getting the high profile publicity from your cooking.
