Peas with salted lemon and olives
If you ever find yourself in the unlikely situation of having more fresh peas than you can eat from the shell try mixing a salad of peas with salted lemon and olives.
It is rather primitive, but I have to admit that I love matching food colours. Like this fantastic salad of green peas with salted yellow lemon peel and black olives. Strong, natural colours known to stimulate the appetite, even though some may say that bright hues in food were so last season last year. I still find the colours of this simple salad extremely inviting.
Ingredients
200 g peas
Salted lemon peel
20 Black olives
Olive oil
Preparation
Scoop out the meat and slice the salted lemon peel.
Shell and sauté peas in olive oil for 2 minutes with a little of the meat from the salted lemon.
Mix salted lemon peel with peas and sun-dried black olives.
Serve peas with salted lemon and olives as a salad starter or side dish.
