Salt Cod Orange Salad

Salt cod orange salad is one of those unlikely combinations that tastes just right when it hits the palate. A marriage of salt, sweet, juicy and dry that’ll make you wish for more.
One of the wonders of salt cod is the flakiness of the meat. Once the fish has been soaked in fresh cold water and boiled, the meat peels off bone and skin in chewy, white flakes with a firm texture a little bit like scallops. And paired with juicy slices of orange as they do in Sicily it comes very close to the perfect seafood salad.
Ingredients
200 g salt cod
3 oranges
1 tbsp capers
Fresh rosemary
Olive oil
Preparation
Rinse the salt cod under cold water.
Soak the fish in plenty of cold water for at least 8 hours. Make sure to change the water a couple of times along the way.
Boil the salt cod in fresh water for about 20 minutes.
Let the fish cool, before peeling flakes of flesh from the skin and bones.
Peel the oranges and cut them in slices.
Arrange the salt cod in layers with slices of orange.
Sprinkle with olive oil, capers and rosemary.
Salt cod orange salad should be served chilled with lots of nice bread to mop up the juices.
