Salad with plums and arugula
In late summer when the plum tree branches are heavy with fruit, there is nothing better than a refreshing salad with plums and arugula.
I am one of the fortunate people who have a plum tree in the garden, and in late summer there is no end to the sweet, ripe fruit. I eat them for breakfast and snacks, bake them in cakes and prepare plum sorbet, ice creams, jams and preserves, and the rest end up in the salad bowl. Preferably in a salad with plums and arugula, because the sweet and bitter flavours suit each other perfectly. Especially, when you add a little hazelnut crunch and Parmesan saltiness. Yum.
Ingredients
6-10 ripe plums
1 bunch of arugula
50 g hazelnuts
50 g Parmesan
5 tbsp olive oil
2 tbsp Balsamic vinegar
Preparation
Wash the plums, cut the in quarters and remove the seed.
Rinse and tear the arugula leaves and mix them with the plums.
Make a dressing of olive oil and balsamic vinegar and pour it over the salad.
Sprinkle the salad with chopped hazelnuts and shavings of Parmesan before serving.
