Pear arugula salad with gorgonzola

Lately there’s been a great interest for gorgonzola on this blog. So here’s a tip on how to eat it with a nice pear arugula salad. At least I like the musty, earthy aroma of gorgonzola combined with the bitter sweetness of arugula and pears. It makes a nice autumn salad. One where you can really taste the season.
Ingredients
100 g firm gorgonzola
1 pear
150 g arugula/rucola/rocket
1 tsp mustard
3 tbsp olive oil
1 tbsp apple vinegar
Salt and pepper
Preparation
Wash and chop pear and arugula coarsely.
Stir mustard with olive oil till it becomes thick and creamy. Then mix with the vinegar.
Add pears to the dressing to prevent oxidation.
Cut the gorgonzola in small cubes and mix well with pear arugula salad before serving.
