Spinach feta pie

Torta di spinaci e feta

This spinach feta pie recipe is the closest I can get to a genuine Turkish börek. And it is really very good.

Once upon a very long time ago I used to live in Turkey, where they excel in börek, an obsessively good savoury pastry. Not having regular access to the Turkish börek bakeries anymore, I’ve started making my own version, and it is absolutely delicious.

Ingredients

1 packet of filo dough
400 g feta cheese or ricotta salata
500 g fresh spinach
Lots of chopped fresh dill
75 g melted butter

Preparation

Clean, boil and chop the spinach.
Mix well with crumbled feta cheese and chopped dill
Place the filo on a sheet of baking paper and open the sheets of filo dough on the last page like a book.
Brush the last two “pages” with melted butter.
Place half the filling on the third “page” from the back of the dough.
Cover with a couple of new sheets brushed with melted butter.
Place the other half of the filling on a clean sheet of dough.
Cover with more layers brushed with melted butter, until you have a perfect square that can be lifted onto a baking dish.
Brush the top with melted butter and bake in the oven at 175 C (350 F) for 35 minutes.
Cut the spinach feta pie into squares and serve them as a snack, sandwich or main course with a salad.

This Spinach feta pie is quite similar to Turkish börek.
