Marinated cheese
Formaggio marinato
I’ve never seen much point in marinating a perfectly good cheese, until I tried marinated cheese as antipasti and immediately fell in love with the concept. The olive oil, garlic and green peppercorns make a good firm cheese even more interesting.
Ingredients
200 g parmesan, pecorino or other firm cheese
6 tbsp olive oil
1 tbsp white wine vinegar
1 clove of garlic
2 tsp green Madagascar peppercorn
A little fresh thyme
Preparation
Mix olive oil and vinegar to a dressing
Add sliced garlic, peppercorns and thyme
Cut the cheese in bite sized pieces and cover it with marinate
Leave it marinated cheese in the fridge for a couple of hours before serving.
I never would have thought about marinating a good cheese either, but I’m not going to question it if the Italians do it.
