Lemon square biscuits
Biscotti al limone
I like to have a tin with home made cookies, but unfortunately these lovely lemon square biscuits don’t last long.
My daughter absolutely adores these cookies and they have been part of our family’s Christmas traditions, since she was old enough to bake them herself – and sometimes with a little help from her friends. The cookies keep well in an airtight cookie jar for 2-3 weeks, as long as they are kept out reach from children and other sweet pilferers.
Ingredients
For the cookies
150 g butter
150 g powdered icing sugar
2 eggs
180 g flour
1 tsp baking powder
For the icing
150 g powdered icing sugar
1 lemon – juice and zest
Preparation
Mix butter with sugar.
Add eggs and gradually incorporate flour mixed with baking powder.
Spread the dough on a sheet of baking paper in an A4 sized oven proof tin.
Bake at 190 C (375 F) for 40 minutes
Place on a wire rack to cool
Dissolve the icing sugar in lemon juice and stir with grated lemon zest.
Decorate the cake with icing and leave it to dry.
Cut the lemon biscuits up in nice squares.
