Red cabbage salad with figs and oranges

Raw red cabbage salad with dried figs make a delightful combo somewhere between sweet and savoury, soft and crunchy. And along with the oranges it keeps the memory of summer alive.
In the north of Italy you can find raw red cabbage on farmers’ markets, but in the south most gartners willingly swear such a thing as red cabbage does not exist. They claim the pickled red cabbage you buy in jars is made from white cabbage with a tint of beetroot colouring. The point is – I think – that the two kinds of cabbage are pretty much interchangable. But for this particular salad the red cabbage is preferable. If you can find it.
Ingredients
¼ red cabbage
1 orange
5 dried figs
2 tbsp balsamic vinegar
4 tbsp olive oil
5 walnuts
Preparation
Slice the dried figs and cover them with balsamic vinegar
Rinse, dry and cut the red cabbage very finely
Grate some of the orange peel over the figs.
Peel the orange and cut the meat into fine pieces.
Mix oranges and olive oil well with the figs
Toss in the red cabbage.
Sprinkle the red cabbage salad with walnuts before serving.
Oranges and dried figs counterbalance the red cabbage salad’s inherent bitterness.
That looks really simple but sooo tasty. We’re going to give this a try, definitely!
Our friend is trying to persuade us to meet up with them in Italy at the end of April. Very tempted – will have to look at the finances. :)

I love cabbage but the hubby needs it a little sweet so this recipe looks perfect for both of us! I’m a HUGE fig fan and I love the orange and walnuts as well. Bookmarked this one!
I think you husband is right in demanding a sweet addition to the cabbage. Makes you feel hungry and healthy at the same time:)
