White bean and tuna salad
Insalata di fagioli con tonno
This white bean and tuna salad springs from the Tuscan love of white beans. It proves that dried beans are good even when they are not cooked in a bottle. It is easily made from white beans and canned tuna and doesn’t need further presentation.
Ingredients
250 g white beans (soaked overnight and boiled with garlic and sage to unbursting tenderness for about an hour)
8 tbsp olive oil
Juice of ½ lemon
Salt, pepper, oregano
3 stalks of celery
1 red onion
1 can of tuna (about 250 g)
Preparation
Mix dressing of oil, lemon juice and salt, pepper and pour it over the still hot beans.
Peel, clean and chop celery and onion finely.

Mix the white bean and tuna salad well before serving.
