Raw beetroot salad with carrot, capers, and leeks

Beetroot tartare or raw beetroot salad is sometimes made with horseradish or cream cheese which makes a perfect accompaniment salmon, cod, ham and pate served as a starter or a main course. This version is milder and more like an ordinary winter salad, though still full of taste, vitamins and raw energy.
Ingredients
1 carrot
1 leek
¼ celery
2 beetroots
1 tbsp capers
½ lemon juice
Salt, pepper, and olive oil.
Fresh parsley
Preparation
Clean and peel the vegetables, grate them or shred them finely in a food processor.
Chop the capers and mix well with the vegetables.
Mix a dressing of olive oil and lemon juice, add salt and pepper to taste and pour it over the salad.
Serve on a bed of fresh parsley.
