Orange and avocado salad
Orange and avocado may sound like an odd pair, but in fact they suit each other perfectly.
The sweet acidity of the fruit counterbalance the fatty richness of the avocado, olives add a touch of salt, and roasted almonds and a few raw onion rings provide a nice crispy crunchiness. An altogether appetizing way to start a meal. Just like other fruit and veg combos like fennel and pomegranate, onion and grapes or rhubarb and avocado.
Ingredients
2 oranges
2 ripe avocadoes
1 red onion
½ dl black olives
½ dl skinned and roasted almonds
Juice from ½ lemon
Olive oil
Preparation
Peel oranges and avocadoes and cut them into nice slices.
Mix with a dressing of olive oil and lemon juice.
Sprinkle with onion rings, olives and almonds.
Serve the orange and avocado salad as a starter or as a side dish with meat.

I had some avocados very ripe and destined for guacamole, but then found this recipe while searching for an idea for a salad to go with some Tuscan butternut and kale soup I was making. I had tangerines and green olives on hand, and added some fresh basil. Out if this world! Thank you!
