Banana cake with coffee, chocolate and walnuts works wonders as an instant energy boost. Just what is needed for an Italian breakfast or an afternoon cup of tea.
In Italy as in other parts of Europa, bananas are imported goods. Even though there is a Sicilian variety known as Comune di Sicilia which has been grown on the island for centuries. It is supposed to have a very interesting flavor, but with a limited production these fruits can be extremely hard to obtain. Most of them are grown for private uses or sold through local shops. And in this banana cake with coffee, chocolate and walnuts you will not be able to tell the difference.

Ingredients
240 g sugar
150 g butter
3 eggs
50 ml strong coffee
240 g flour
2 tsp baking powder
60 g oatmeal
3 bananas
100 g dark chocolate
50 g walnuts
Preparation
Whisk butter and sugar with an electric mixer until light and fluffy.
Beat the eggs into the mixture, one at a time.
Sift flour and baking powder into the mixture.
Mash the bananas and fold the mash into the mixture along with coffee, oatmeal, chocolate chips and chopped walnuts.
Pour the cake mixture into a ring mold and bake at 170 C / 340 F for 1 hour.
Serve banana cake with coffee, chocolate and walnuts as part of the morning breakfast or afternoon tea.
