Apple spice cake
Torta di mele con semi di anice, cardamomo e cannella
I’m not quite sure who to credit for this apple spice cake recipe, which has been part of my autumn and winter repertoire for years. Loads of fresh apples turn the ordinary pound cake into a moist and fruity dessert, and the spicing makes you think of liquorice and fragrant Arabic bazaars.
The cake can also be made with peaches, plums, apricots, pear and other kinds of fruit.
Ingredients
250 g sugar
250 g butter
3 eggs
250 g flour
2 tsp baking powder
5-7 apples
For the topping
3 tbsp sugar
1 tbsp ground cinnamon
1 tsp ground cardamom
1 tsp ground aniseed
Preparation
Whisk sugar and butter with a electric mixer until soft and white
Add one egg at a time
Mix with flour and baking powder
Peel, core and slice the apples and fold the peices into the cake mixture
Pour the mixture into a greased round baking tin and cover with a sprinkling of sugar and spices
Bake for 35 minutes at 160 C /325 F.
Even when the cake appears to be done, it can be a little soft in the centre.

This looks so delicious. I love cakes with apple in them…and cinnamon. The cardamon is an interesting addition.
In Scandinavia cardemom is very popular in cakes.
I didn’t have dessert tonight and would love too try a piece of this.
