Tomato, peach and ricotta salad

Tomato, peach and ricotta salad combines some of the produce that is most plentiful and readily available on the height of summer.
To me tomato, peach and ricotta salad is the epitome of summer in Italy. It is pretty, simple, juicy and has a good balance between salt and sweetness. And if you keep tomatoes and peaches chilled, the salad is very refreshing like other fruit and veg salads such as apricot-onion and avocado-rhubarb.
Ingredients
8 small tomatoes
2 yellow peaches
100 g fresh ricotta
White wine vinegar, olive oil and fresh basil
Preparation
Wash the tomatoes and cut them in bite sized pieces.
Peel the peaches, and cut out in pieces matching the tomatoes.
Mix the salad with a dressing of 2 tbsp white wine vinegar and 6 tbsp olive oil.
Spoon ricotta on top along with fresh basil leaves and serve the tomato, peach and ricotta salad chilled.
