A stuffed mushrooms recipe makes one of those dishes that looks classy and irresistible as snack, partyfood, part of a buffet or on a plate of antipasti. I suppose it has something to do with the surprise filling that can be varied and personalized indefinitely. I have seen recipes for mushrooms stuffed with blue cheese, crab meat and bacon, but my preferred version is mozzarella and cured ham. With ingredients like that, it just can’t fail.
The mushrooms can be prepared in less than 30 minutes including 20 minutes in the oven, even if you – like me – prefer to fry the finely chopped stem in e little olive oil, before mixing it with the filling. That way the hat will accommodate more, but apart from that it makes no difference. I normally use ordinary small, white mushrooms, but the big Portobello type is just as good, so you might be guided by what is available. Anything goes, as long as the measures are adjusted accordingly.
Ingredients
8 white mushrooms
2 thick slices of cured ham (prosciutto crudo) chopped in tiny squares.
½ mozzarella cheese cut in tiny squares.
Olive oil
Preparation
Clean the mushrooms and carefully break off the stem.
Chop the stems finely and fry them in a little oil.
Mix the fried stems with mozzarella and ham and use the mixture to fill the mushrooms.
Place the stuffed mushrooms in the oven at 170 C (340F) for 20 minutes – or until the cheese has melted.

When I was in Emilia-Romagna in June, I was served porcini in many different styles and dishes — all wonderful. But, this is yet another recipe. Looks really delicious!
It’s very delicate – even if you can’t get hold of proper Italian porcini.
