It is amazing how the addition of fruit can lift an otherwise heavy salad. This raw carrot salad recipe uses both apples and oranges in an unusual taste combination.
Ingredients
4 carrots
1 apple
1 orange
1 tbsp roasted pumpkin seeds (can be replaced by pinenuts)
Olive oil
White wine or apple vinegar.
Preparation
Peel and slice the carrots thinly (use a mandoline slicer, if you have got one)
Dice orange and apple and mix well with carrots, oil and vinegar.
Sprinkle the raw carrot salad recipe with roasted pumpkin seeds before serving.
