Winter salad with cabbage, cranberries and walnuts

Inviting, fresh and crunchy winter salad with cabbage, apple, walnuts and cranberries.
Cabbage based salads constitute the crunchy fresh greens of the winter season, and they don’t have to be doused in mayonnaise to taste terrific. This one always leads to clean plates around here.
Ingredients
½ pointed cabbage
1 apple
2 tbsp walnuts
2 tbsp cranberries
1 tbsp Dijon mustard
4 tbsp olive oil
1 tbsp white wine vinegar
Preparation
Rinse the cabbage, cut it into fine shreds and drain off excess water.
Wash the apple, remove the core and chop it up in mouth sized bites.
Whisk mustard and oil in a salad bowl to make the dressing. The oil should be added little by little to make the mustard thick and creamy. Add vinegar to taste.
Toss in the apple and make sure the fruit is covered with dressing to prevent it from browning.
Mix with cranberries, cabbage and walnuts and serve as a starter or sidedish.

You can use ordinary white cabbage instead, though pointed cabbage leaves are a little less fibrous.
