It takes time to get used to the thought of heating lettuce, but the effect is surprisingly delicious. Especially in a warm green pea salad with pancetta.
100 g pancetta or bacon
1 head of lettuce
2 spring onions
500 g shelled green peas
Salt and a pinch of sugar
Fresh mint and/or chervil
Dice the pancetta and fry in a little oil until light brown and crisp.
Add sliced sliced onions and peas and let them simmer for a couple of minutes
Add salt and a pinch of sugar followed by strips of lettuce
Heat the green pea salad through and serve with lots of fresh mint or chervil.
