Strawberry Rocket Salad

Sweet fruit, bitter leaves, sour vinegar and salty cheese always make a terrific salad, as this refreshing strawberry rocket combo goes to prove.
I love salads with fresh fruit, and especially those uniting the basic tastes of sour, sweet, bitter and salty. And when strawberries are in season, there is nothing better than a salad of strawberries and rocket leaves in a Balsamic vinegar dressing. The salad is slightly reminiscent of the classic Italian fragole all’aceto Balsamico dessert.
Later in the summer there are similar yet diverse salads like the plum and arugula and pear arugula and gorgonzola.
Ingredients
200 g rocket leaves
200 g ripe strawberries
1tbsp balsamic vinegar
2 tbsp olive oil
Shavings of Parmesan cheese
Preparation
Rinse the rocket leaves, shake them dry and tear them into pieces.
Wash and slice the strawberries.
Whisk olive oil with balsamic vinegar to make a salad dressing.
Mix all the ingredients in a salad bowl.
Shower the strawberry rocket salad with generous shavings of Parmesan cheese before serving.
