Spinach orange salad

Spinach orange salad with chilli and dried apricots tastes of early spring – hugely refreshing – both sweet and hot with a nice crunch.
Ingredients
250 g raw baby spinach leaves
½ fresh red chilli
1 orange
5-10 dried apricots
1 tbsp raisins
2 slices one day old bread
3 tbsp olive oil
1 tbsp white wine vinegar
Preparation
Rinse the spinach thoroughly in plenty of water
Cube the bread and fry it slowly in olive oil until crispy and nicely browned.
Mix a dressing of oil, vinegard and shredded orange peel
Peel and cut the orange in bite sized pieces
Slice the red chilli and cut the apricots in cubes
Toss spinach, oranges, chili, raisins and apricots in the dressing
Sprinkle the spinach orange salad with fried bread croutons before serving.

Spinach orange salad in a fantastic combination with chili, apricots and raisins.
I first saw this salad on a menu in a restaurant in Turkey and thought it sounded a bit odd – and then we tasted it. It was yummy! I think it was with rocket leaves though, if remember rightly so we must try it with spinach.

I found it odd too, but the combination is really convincing. And I’m sure it tastes great with rocket leaves as well.
Have you tried to add fennel and ribbons of courgette as well and dress the salad with a vinaigrette made of olive oil, lemon juice and fresh mint? So refreshing!!
Good idea. I’ll have to try that – if I can find courgettes this early in season:)
