Salad with pears and pecorino
Salad with pears and pecorino cheese makes an easy salad with a taste of goat cheese and late summer gardens.
In Italy, my pear tree carries dozens of tiny, firm pears, while Danish pears are bigger and juicier. This salad with pears and pecorino works with both types of fruit, as long as the pears are not too sweet and mature. I also use the tine pears from Puglia in another salad with gorgonzola and in a creme brulee, while poached pears are better with bigger fruits.
Ingredients
8 small or 2 big pears
½ lettuce
pecorino shavings
parsley
olive oil and lemon juice
Preparation
Wash the pears, remove the core and stalk and cut them into thin slices.
Coat the pears in a dressing of olive oil and lemon juice to prevent them from going brown.
Wash and drain the lettuce.
Toss lettuce with pears and add a generous shavings of pecorino.
Salad with pears and pecorino is refreshing as a starter before the proper meal.

Certainly – or you can substitute with another firm, dry cheese like parmesan or the Spanish manchego.
