Pasta with sun dried tomatoes

Every summer I dry about 10 kilo tomatoes to see us through winter. It is nice to have a permanent stock of strongly concentrated tomato taste that can be sprinkled as sunshine over an otherwise ordinary dish. With sun dried tomatoes in the house you can always cook up a memorably strong dish of pasta with sun dried tomatoes and balsamic vinegar in less than 15 minutes.
