Moist chocolate orange cake
Torta morbida al cioccolato e arancia
This chocolate orange cake is almost a brownie, but not quite. It contains more chocolate and less sugar and no starch whatsoever.
Chocolate orange cake is basically baked chocolate. The few ingredients and absence of flour or starch create an intense dark orange and chocolate flavour similar to – but not quite the same as – other chocolate cake recipes like chocolate almond cake, chocolate cake with biscuits, and chocolate with a bleeding heart. The cake will inevitably deflate when it is taken out of the oven, which means that the surface will look cracked and uneven, but you can always trim the slices before serving.
Ingredients
200 g chocolate
100 g butter
100 g sugar
4 eggs
Zest of 1 orange
Preparation
Chop chocolate and melt it with butter over a water bath.
Separate the egg whites from the egg yolks.
Whisk the egg whites until white and fluffy.
Whisk egg yolk with sugar and grated orange zest, until the sugar grains are no longer visible.
Stir the melted chocolate and butter into the egg yolk mixture.
Fold the egg whites into chocolate batter.
Line a rectangular baking pan with parchment paper and our the chocolate orange cake batter into the tin.
Bake at 160 C / 320 F for 45 minutes. The cake is done when a cooking pin comes out wet but not sticky.
Leave the cake to cool on a wire rack, and then refrigerate for several hours before serving.
Decorate the moist chocolate orange cake with a dusting of cocoa and grated orange peel and serve with whipped vanilla cream.
