In Denmark fishballs are mostly made from a finely minced, readymade batter that tastes of fish and potato starch. Fortunately, I’ve never seen this product in Italy, which means I have to chop fish for fishballs myself. That way both taste and texture improve. Especially, when you enhance flavour by adding a few seasonal herbs. And the Italian fishball recipe is quite as easy as using the prefeb fish batter.
