Homemade almond paste recipe that can be seen as a strange cultural and culinary mashup starting with the pasta di mandorla in Italy. So quite appropriately we are cheating and using readymade marzipan instead of shelling and grinding our own almonds.
In Denmark ‘kransekage’ are as much a part of New Year’s Eve as the Queen’s speech and champagne. Towering cake rings are also an integral part of other celebrations from christenings to weddings. In fact the toughest discipline in the Great Danish Bake Off was a cornucopia made from homemade almond pastry.
The funny thing is that festive Danish kransekage is made from the same almond pastry as the rather ordinary Italian pasta di mandorla. A difference in attitude that I think can be ascribed to the price, status and scarcity of almonds.
