Fennel grapefruit salad

Insalata di finocchi e pompelmo

Fennel grapefruit salad  is a refreshing mix of two unlike ingredients. Serve it with a crunchy topping of bread croutons roasted in olive oil.

Fennel is a very versatile vegetable that tastes ggod in all sorts of different combinations, like fennel and appel, fennel cucumber and cabbage or fennel and madagascar pepper

Ingredients

1 fennel
1 grapefruit
1 celery stalk
1 slice of bread
1 clove of garlic
Olive oil, salt, pepper
Fresh mint, parsley and fennel topping

Preparation

Clean and cut the fennel in very thin slices
Clean and chop the celery finely
Peel the grapefruit and cut out wedges of flesh making sure to avoid the membranes and the sour white edges.
Mix fennel, grapefruit and celery with a little olive oil
Cube the bread and fry it to crisp croutons with the garlic
Sprinkle croutons and fresh herbs over the fennel grapefruit salad before serving.

    What a simple little salad! I’ve never had the combination of fennel and grapefruit. It sounds wonderful! Thanks for the idea!

    Looks delicious! I usually make a fennel and orange salad with a sprinkle of chopped coriander leaves. Will certainly try this version. Thank you!

      I usually sprinkle fennel and oranges with rosemary, but now I’ll have to try it with coriander too. Thanks.
