When zucchini and eggplants are in season you can buy them everywhere for next to nothing, and this in itself poses a challenge. They have to be prepared in a lot of different ways for the family to take an interest after at least a couple of months with the same vegetables.
Whole wheat grains are rich on fiber and have a high nutritional value, and baked vegetables do not absorb obscure amounts of oil. From a dietary point of view this salad can be served with a halo, but thanks to the herbs and spices it has still got a great flavor that makes it a pleasure to eat.
