Chocolate Date Balls
I suspect these no-bake chocolate date balls were originally part of a paleo diet, but they are so incredibly good even non-believers should have a chance to enjoy them
I got this recipe for chocolate date balls from Peter, an inspiring colleague who has introduced me to foreign notions like butter coffee and personal stamina. Sometimes he treats us to his homemade paleo sweets, like these almond and date balls rolled in chocolate and shredded coconut to make a hard chocolate shell with a big, soft, sweet heart. Absolutely irresistible AND caveman healthy too, if you are into a no refined sugar regime.
Ingredients
200 g almonds
2 tbsp unsweetened cocoa
A pinch of salt
1 tsp vanilla seeds
125 g dates
100 g chocolate
Shredded coconut for topping
Preparation
Blend the almonds to a fine flourand mix with cocoa, salt and vanilla seeds
Blend the dates, an rub them into the dry ingredients to form a firm dough (this is a very sticky process)
Roll the mixture into bite sized balls (this is an even stickier process).
Place the date balls on a sheet of non-stick paper and let them settle in the fridge for an hour.
Melt the chocolate in a bain marie.
Dip each sphere in melted chocolate and roll it in shredded coconut.
Let the chocolate date balls cool and harden in the fridge before serving.
