Chicken in white wine
Pollo con le olive al Frascati
Chicken in white wine is a recipe that will give you a nice and tasty meal in less than 10 minutes. A preparation faster than take-away.
The Italian name of the dish prescribes wine from Frascati, as an indication that the recipe derives from Lazio or more precisely Rome, where the inexpensive local white wine is cherished both in food and on the table. I am, however, sure that any dry, white wine will do, just as the olives do not necessarily have to be the small black Gaeta olives, unless you are cooking for a Rome theme party.
Ingredients
2 chicken breasts
1 clove of garlic
1 tbsp flour
2 glasses of white wine
1 glass of chicken stock
200 g black olives
Fresh salvia (sage)
Olive oil, salt, pepper
Preparation
Cut the chicken breast in bite-sized pieces
Fry the chicken with garlic and salvia leaves in olive oil until light brown
Stir in flour and let it swell, before you add chicken stock and wine.
Turn down the heat and let it simmer for 10-20 minutes till the chicken is done.
Add olives, heat them through and adjust the taste with salt and pepper.

It does not require a great deal of effort to prepare chicken in white wine
Sounds easy and very yummy. I think in North America we would probably call the salvia – sage – or am I wrong on this?

I’m with Leigh…that looks like what we call sage here in the U.S. Whatever it is, all together it looks absolutely delicious.
