Traditional beet salad with dill and lemon for extra freshness. A bit like old-fashioned Danish pickles but with a raw and acid twist.
In Denmark we love dill in salads and there is a long tradition for combining beetroot and dill in pickles. But the combo works great in salads as well, and the grated lemon peel adds a nice acid freshness. I use beet salad with dill and lemon as a side dish with fried meat or as a starter with other vegetables or a paté.
