Aubergine and Onions

Melanzane e cipolle
Aubergine and onion is a simple and tasty sidedish that goes well with all kinds of meat. It can also be served as a starter with different kinds of salami and cold cuts. Or as a vegetarian main course.

Ingredients

2 aubergines
1 onion
2 cloves of garlic
Fresh mint
Olive oil, salt, pepper

Preparation

Wash the aubergines. Cut them into cubes. And sprinkle with salt.
Peel, chop and fry the onion in olive oil
Rinse the cubed aubergines. Add them to the saucepan. And fry until light brown
Crush the garlic. Add it to the aubergines
Add more oil if the dish looks too dry. Cover the saucepan with a lid. Let the aubergine and onion simmer for another 10 minutes.
Serve aubergine and onion hot or cold with a lavish sprinkling of fresh mint
