Walnut apple cake

Ground walnuts give this walnut apple cake recipe a characteristic rich, round flavour that’s not normally associated with apples. The basic recipe resembles a Greek karydopita but the apple topping makes it something else in a more cake than confections kind of way. Still, it is densely good and sweet and a gives you a nice taste of the season.

Ingredients
1 kg apples
½ lemon juice
1 tbsp honey
225 g butter
250 g sugar
1 tsp vanilla sugar
3 eggs
150 g walnuts
150 g flour
Preparation
Peel and core the apples and cut them in smaller pieces.
Stir lemon juice with honey and pour it over the sliced apples to prevent them from turning brown.
Blend or grate walnuts finely to make a kind of meal.
Mix butter with sugar and vanilla until fluffy and white.
Add one egg at a time.
Gradually mix in the blended walnuts and the flour.
Pour the mixture into a greased spring form pan.
Top with apple slices.
Bake for 55-60 minutes at 160 C (320 F). Cover the cake with tin foil if the apples start to blacken.
The walnut apple cake recipe can be sprinkled with powdered sugar or covered with a jelly made from the honeyed lemon juice and 4 leaves of gelatin before serving.
