Stuffed eggs hardly qualify as a recipe. It’s more like a trick you perform every time you’re entertaining and have run out of time, ideas and ingredients.
Boiled eggs are always popular as a lunch dish or as part of an antipasto with cold cut and some vegetables. Especially, when they have been taste enhanced in the typical Italian capers and anchovies way.
4 hard boiled eggs
1 tsp mustard
2 tsp mayonnaise
2 tsp capers
Cut the eggs in halves. Remove and mash the yolk with anchovies.
Mix mustard and mayonnaise with the egg yolk.
Fold in chopped capers and use the yolk mixture to stuff the egg whites.
Garnish the stuffed egg recipe with parsley.
