Mustard potato flan
Sformatino di patate con mostarda
Mustard potato flan is one of the more elegant mash potato dishes. This has made it one of my favourite sidedishes. And the best thing about it is that it looks impressive, tastes great and can be prepared hours in advance and just heated before serving.
Ingredients
8 potatoes
2 tbsp butter
1 tbsp mustard
Grated zest of ½ lemon
Salt
watercress
Preparation
Clean the potatoes and boil for 12 minutes
Leave the potatoes to cool in the boiling water for another 12 minutes
Drain potatoes and mash roughly with salt, butter, mustard and lemon zest
Press the mash through a steel mould to press it in shape and bake at 220 C/ 430 F for 20 minutes until golden brown.
Decorate the mustard potato flan with watercress before serving
