Chicken with chickpeas and oranges
Pollo con ceci e arancia
Chicken with chickpeas and oranges is an all time favourite in our family. You can virtually taste the sunshine and vitamins in every bite.
A great everyday dinner that can easily be made to serve two or ten people according to your needs, and afterwards the plates are always wiped clean.
Ingredients
1 chicken breast (2 halves)
2 small onions
2 cloves of garlic
2 oranges (juice and some zest)
6 dried apricots
2 pepperoncini
100 g of chickpeas
2 tsp turmeric
3 tsp ground coriander
200 ml chicken stock
olive oil, salt, pepper
Preparation
Leave the chick peas to soak overnight and boil them for 45 minutes until tender.
Cut the chicken breast in bite sized chunks and fry them in oil.
Peel onions and cut them in wedges. Peel and crush garlic, and fry both onions and garlic with the chicken meat until golden.
Add pepperoncini and spices and roast well for a couple of minutes.
Cover with orange juice, orange zest and chicken stock and leave the dish to simmer for 30 minutes till the meat is tender.
Add chickpeas and chopped apricots.
Cook the chicken with chickpeas and oranges for another 10 minutes before serving with rice, bread or couscous.
